How to Make Coconut Clusters


4 cups large coconut chips (not shreds)

1 cup raw pumpkin seeds

1 cup raw sunflower seeds

6 T. chia seeds

6T. flax seeds

1/2 cup honey

1 tsp salt

1 T. Water


Preheat oven to 325F. Stir all the ingredients together until well blended. Spread out across 2 sheet pans lined with parchment. (I like stoneware because it’s best for even browning) Bake for 30 minutes or until the coconut is dark, golden brown. Remove from oven and cook completely. Gently break these sweet coconut sheets into large clusters and store in mason jars. These are great on yogurt or as a snack food. Use like you would granola.
